Simple Matcha Pesto Pasta with Rice Noodles

This matcha pesto pasta is perfect for summer – it’s filling, but also fresh and light!

Matcha

The star of this dish is the matcha! It not only adds the most gorgeous pop of green, but also an extra punch of antioxidants to this dish. Anything with pesto automatically has my heart too. Throw your protein of choice on top, pair with a salad and the is the perfect spring or summer main.

Pesto

Instead of plain pesto, I like to use a pesto + tahini combo that I think tastes even better. It also adds healthy unsaturated fats and a bit of protein. If you’ve never had tahini, it’s like your favorite nut butter but it’s made from sesame seeds and is a bit more savory! You’re gonna love it.

Pasta

I used rice noodles for this pasta because I had them on hand, but you can use any you’d like. They were fun to experiment with because they cook so fast and have a softer texture than the typical pasta dish. They’re naturally gluten-free, and are typically used in asian dishes with broth, but I thought it would be interesting to use them in a little bit of a different way here!

Substitutions

  • pesto – you can substitute any tahini + 1 tbsp any pre-made pesto for this tahini + pesto blend.
  • pasta – use any type of noodles you like in this recipe! Chickpea pasta would be a great higher-protein choice.
  • parsley – sub any herbs to garnish or skip it all together!
  • lemon juice – you can also use lime juice if it’s all you have on hand.

Simple Matcha Pesto Pasta with Rice Noodles

Description

You’re going to love this light and easy pasta recipe! Its depth of flavor and nutrient density make it a unique and fun addition to any meal.


Ingredients

Scale
  • 1/2 tbsp matcha (mine is matcha.com)
  • 1/4 cup tahini + pesto
  • juice of 1/2 a lemon
  • 1/4 tsp salt
  • 2 oz or 1 serving rice noodles
  • parsley to garnish (optional)

Instructions

  1. Prepare matcha
    1. traditional prep
      1. microwave 1/2 cup water until boiling
      2. let cool for 1 min and pour into small bowl to warm the bowl
      3. pour out water and dry bowl
      4. sift matcha through fine mesh strainer into bowl
      5. add 2 tbsp warm water and whisk with side to side strokes to combine
    2. easy prep
      1. blend matcha + 2 tbsp water in blender or with milk frother
  2. Add prepared matcha, tahini + pesto, lemon juice, and salt to mason jar and shake to combine
  3. Cook pasta according to package directions, drain and add to bowl
  4. Add sauce to pasta
  5. Top with parsley (optional)

Notes

I used the Tenchi Ceremonial Organic Matcha from matcha.com!

I also used the Tahini + Pesto blend from SoCo Tahini. You can substitute 1/4 cup tahini and 1 tbsp any pesto of choice!
