Cozy Tomato Pasta with Sautéed Shrimp and Kale

Description

The coziest, balanced pasta dish ready in 20 minutes or less!


Ingredients

– 2 oz dry angel hair pasta

– 1/2 cup tomato puree (I used Mutti brand)

– several big shakes of everything but the elote seasoning (from Trader Joes)

– 8 oz shrimp

– 1 tbsp olive oil

– 1-2 tbsp lemon juice

– 1 cup kale, loosely packed and washed with stems removed

– pinch of salt

– ~1 oz fresh parmesan for topping


Instructions

Saute shrimp in the olive oil and add lemon juice; cook until golden brown on each side, flipping as needed (goal internal temp >145F).

Cook pasta according to package directions and drain in colander.

When shrimp are done cooking, remove shrimp and add kale to pan and saute with a pinch of salt until starting to brown.

Portion pasta into 2 bowls and mix with 1/4 cup tomato puree and a few big shakes of elote seasoning in each bowl. Top with the sautéed shrimp and kale, and grate fresh parmesan over top to taste.

Notes

If you don’t have the elote seasoning, you can add your favorite spices (Italian blend would be nice – use a bit less) or use marinara sauce instead of tomato puree.
