You’re going to be hooked on these crunchy & flavorful sweet potato toasts – made sweet or savory.
– Sweet potatoes
– Base spread: nut or seed butter, ricotta cheese, tzatziki, cottage cheese, plain yogurt, etc.
– Toppings: fresh fruit or veg, nuts/seeds, fresh herbs, cacao nibs, hemp hearts, etc.
– Drizzle: balsamic vinegar, honey or hot honey, olive oil, tahini, sriracha, hot sauce, etc.
Scrub sweet potatoes clean with vegetable brush and poke holes around sides.
Wrap in damp paper towel and microwave ~3 minutes per sweet potato to soften.
Cut off ends and slice into thin slices lengthwise (or widthwise for smaller, disc-like slices).
Place in one layer in air fryer and cook at 400 degrees F or 200 C for 12-15 minutes or until edges are crispy.
Add base spread, toppings, drizzle/garnish, and enjoy hot 😊
