Air-Fried Sweet Potato Toast
Satisfying, simple, and nutrient-rich sweet potato toast is perfect enjoyed for breakfast, lunch, or as a snack. Choose your own sweet or savory toppings to customize this recipe!
As a Registered Dietitian, I love finding ways to sneak colorful veg into any dish, and sweet potatoes are always an easy win. They’re a starchy vegetable that provides a good source of complex carbohydrates to add satisfaction to your meal, and are rich in fiber and micronutrients such as potassium and beta-carotene (a precursor to Vitamin A).
I’m also a huge fan of cooking just about anything in my air-fryer, and if you have one, you might be too. It’s so quick and an easy way to give foods that perfect crunch.
In about 20 minutes you can whip up a batch of these crispy sweet potato toasts that everyone in your house will devour – or a plate of them just for you!

Sweet Potato Nutrition
Sweet potatoes are best known for their high beta-carotene content, evidenced by their bright orange color. Beta-carotene is an orange pigment that serves a precursor that the body converts to Vitamin A.
Sweet potatoes are also a good source of:
- Vitamin C
- Vitamin B5
- Vitamin B6
- Vitamin E
Are sweet potato toasts a healthy meal/snack choice? Meals and snacks that contain protein, fiber-rich carbohydrates, colorful fruits and/or veggies, and healthy fats are the gold standard when it comes to nutrition (though of course not every meal will contain all of these, and that’s ok – it’s the overall diet that counts!). Sweet potatoes serve as both a source of fiber rich carbohydrates and colorful (starchy) veg, and when topped or served with protein and healthy fat containing foods and additional non-starchy fruit/veg, they can be a satisfying and healthful meal or snack choice 🙂
Savory Topping Ideas
Savory sweet potato toasts are an easy way to add more veggies to your plate! Here are some of my favorite topping ideas:
- tzatziki sauce, plain yogurt, hummus, pesto, cottage cheese, or ricotta as a base
- grape tomatoes, quartered
- leafy greens, like baby arugula, spinach, or kale
- thinly sliced cucumbers
- fresh chopped herbs like oregano, basil, or thyme
- a drizzle of olive oil, balsamic glaze, sriracha, tahini, or hot sauce
- a sprinkle of nuts or seeds – walnuts, pistachios, pumpkin seeds, etc.
- hemp hearts
Sweet Topping Ideas
With almond butter and berries, sweet potato toasts turn into a dessert-like treat that I’m totally here for! Here are some more ideas if you like your toasts on the sweet side:
- fresh fruits like berries, figs, or sliced banana
- your favorite nut or seed butter, creamy or crunchy
- a sprinkle of lemon, lime, or orange zest
- hemp hearts or a sprinkle of ground flaxseed
- homemade chia jam (microwave frozen berries & a sprinkle of chia seeds for 1.5 mins and mash)
- a sprinkle of nuts or seeds
- my favorite – cacao nibs
How to cut sweet potatoes
My favorite hack is to microwave sweet potatoes for 3 minutes before cutting them to make them easier to cut and reduce the cooking time! I scrub the sweet potatoes under running water with a vegetable brush, and poke a few holes on all sides with a fork. Then I wrap them in a damp paper towel and place in the microwave for 3 minutes (for a single sweet potato) or until soft and easy to cut.
Cut off the very ends of the potato and then create thin slices lengthwise (or widthwise, if you prefer smaller disc-like slices!)
How to cook toasts/ air-fryer settings
Air-fry these sweet potato slices at 400°F (204°C) for 12-15 minutes or until they appear crispy around the edges 🙂

You’re going to be hooked on these crunchy & flavorful sweet potato toasts – made sweet or savory.
– Sweet potatoes
– Base spread: nut or seed butter, ricotta cheese, tzatziki, cottage cheese, plain yogurt, etc.
– Toppings: fresh fruit or veg, nuts/seeds, fresh herbs, cacao nibs, hemp hearts, etc.
– Drizzle: balsamic vinegar, honey or hot honey, olive oil, tahini, sriracha, hot sauce, etc.
Scrub sweet potatoes clean with vegetable brush and poke holes around sides.
Wrap in damp paper towel and microwave ~3 minutes per sweet potato to soften.
Cut off ends and slice into thin slices lengthwise (or widthwise for smaller, disc-like slices).
Place in one layer in air fryer and cook at 400 degrees F or 200 C for 12-15 minutes or until edges are crispy.
Add base spread, toppings, drizzle/garnish, and enjoy hot 😊
