It’s been a minute since I first tried stuffed dates, but at this point they are a staple when I want a little something sweet! I believe these started as a social media trend, but they’re sticking around this blog because they’re timeless in my opinion. They have the perfect amount of sweetness balanced with the savory from the salty almond butter – absolutely dreamy! Making stuffed dates feels like self-care to me, because I know they’re a treat that will satisfy me without leaving me feeling weighed down. I hope you love them as much as I do!

Here’s a quick run-down on the nutrition benefits you’re getting when you make these yummy bites. Dates, cacao nibs, and almond butter are packed with fiber and antioxidants, and provide natural sweetness while also promoting healthy blood sugar and gut, brain, and heart health. If you need or want to make any substitutions to this recipe, here are some ideas!

  • Swap out the crunchy almond butter for any other creamy or crunchy nut or seed butter, or any similar spread. I love making these with Oat Haus granola butter!
  • Instead of cacao nibs, chop up a square of dark chocolate into small pieces and sprinkle on top, or use mini dark chocolate chips.
  • If you aren’t able to eat dates, these toppings would be delicious on figs, or banana or apple slices!

Description

Ingredients

Scale
  • 2 large or 3 medium dates
  • 1 tbsp crunchy almond butter, salted
  • 1 tsp cacao nibs

Instructions

  1. Remove pit from dates.
  2. Spoon almond butter equally into center of dates.
  3. Sprinkle tops with cacao nibs!

Notes

You can substitute any nut or seed butter you like for the crunchy almond butter. Mini chocolate chips also work well if you can’t find cacao nibs.
